Slow Cooker Lemon Chicken Recipe – a super simple dish that packs TONS of great flavor! Chicken, garlic, lemon, Italian dressing mix, capers, and chicken broth. Serve the chicken over pasta or potatoes with a salad. Don't forget to spoon the sauce in the slow cooker over your plate - SO GOOD!
In a large skillet, heat olive oil over medium-high heat. Cook boneless skinless chicken breasts for 2 minutes on each side, just until they start to turn golden brown. Place chicken in 6-qt slow cooker.
Sprinkle chicken with Italian dressing mix. Add fresh garlic, butter, capers, fresh lemon juice and chicken broth.
Cover the crock pot and cook on low heat for 6 hours.
Notes:
You can use any chicken that you have on hand. Boneless or bone-in chicken both work fine.
I use boneless skinless chicken breasts.
You can use skin-on chicken thighs or skinless chicken thighs. Chicken tenderloins also work great.
Bone-in chicken will take longer to cook.
Can I use frozen chicken? Yes! Frozen chicken breasts will work fine in this recipe.
Do I have to brown the chicken on the stove? No. You can skip this step if you are short on time.
Do NOT make the Italian dressing. You are only using the seasoning packet.
I use Good Seasonings Italian Dressing Mix. You can find it in the salad dressing aisle near the ranch seasoning packets.
Can I cook Lemon Chicken on HIGH? Yes! Cook the chicken for 3 to 4 hours on HIGH in the slow cooker.
